Food Hygiene

This section provides an introduction to the law on food hygiene and ends with what the law has to say about unhygienic food businesses. In between there is an explanation about what the registration of a food business involves and how to do it, understanding the principles of HACCP and how they are applied, when a food business needs to be approved, what the law says about products of animal origin and lots more.

The core law in this area is to be found in Regulation (EC) 852/2004, Regulation (EC) 853/2004 and Regulation (EC) 854/2004 - sounds formidable, but it is a big improvement on what the law looked like before.
